recipe: swedish pancakes ( for mother's day or any day ).

odin made his mother a nice card for mother’s day and he also knows that one of her very favorite things to have for breakfast is swedish pancakes ( sometimes known as nordic pancakes ) which are more like crepes than your traditional north american pancake.

odin created a handy mnemonic device to remember the recipe. 321 EMF! that’s 3 eggs, 2 cups of milk and 1 cup of flour. mix together and add a pinch of sugar and salt and you’re ready to go.

pour a thin layer of batter on a preheated skillet and cook for a few minutes ( until flippable ), turn and cook for a few more until golden brown. roll-up each pancake and serve with fruit and maple syrup.

super easy and super delicious!

the passing of The Peach Tree?

seven years ago for mother’s day i planted a peach tree and it gave us many stories, including balloon peach decoys, The Great Peach Harvest, The Transformative Power of A Real Peach ( and a little heavy whipping cream ) and peaches and cream ice cream.

but alas, the brutal winter seems to have taken a toll on the peach tree and save for a few leaves on one branch, the tree appears to be dead.

such a big, big, big drag. i was really looking forward to some peaches and and heavy whipping cream ;-(

happy mother’s day!

odin was up very early putting his new finger knitting skills to good use as he wanted to make his mother a Very Special Bracelet before she woke up. he’s getting so good with the required eye hand coordination that i have to ask him to slow down to take a good picture.

he can crank out a nice 4 string bracelet or bookmark or whatnot in very short order while i still struggle with the basic concept of how to finger knit.

the finished product! he thought it would be a nice touch to take the picture with it shaped like a heart. i like his thinking. i’m sure his mother will love it.

now, let’s see, if i can get him to work 12 hours a day making bracelets and bookmarks…

then it’s time to wrap up a super secret gift we both got for her that she’s been wanting for A Really Long Time. odin thought it would be fun to wrap and color the entire box to make it super special.

i love, love, love that he whistles while he works. and a kind-of lonesome cowboy tune to boot that i can’t remember the name of at the moment.

to this day i still marvel at the wide assortment of colors in the modern box of crayola crayons and can’t help but feel like i got shorted as a child.

we briefly debated whether or not cerulean blue could be an acceptable substitute for indigo when coloring a rainbow.
