Perfect Purple Moon Ice Cream!

some might recall i’ve been concocting purple moon ice cream which is my 100% organic homage to the froot loopy blue moon ice cream without the artificial food coloring, or other mystery ingredients. it took a few iterations but i’ve finally perfected the recipe.

nearly everyone – young and old – who taste it, loooooove it ( you can’t win everyone over ). if they’re familiar with blue moon they say it’s even better than the original, which is not terribly surprising given the delicious organic valley dairy ( yes, i’m the ov milk and cream brand manager and i’m biased. but really, the quality of the ingredients always matters, and with ice cream they might matter even a little bit more. ) and real fruit and citrus flavors. if they’re not familiar with blue moon, then they just think it’s super great ice cream with a bright fruity flavor and a smooth mouthfeel ( thanks to the heavy whipping cream and vanilla pudding ).

i didn’t do anything magical. i think most people are just used to mediocre ice cream and using the best ingredients really highlights how extraordinary ice cream can be.

of course, odin is the only critic that matters to me. he loves it and says it’s his favorite ice cream. that’s all the praise i need to put it into permanent rotation.

basically, after the original experiment, i tried a bunch of things that didn’t work and the final recipe is close to the first with a few key changes. the quantities are doubled to make a full batch in standard ice cream mixer. the amount of raspberry juice was tweaked to give more natural color and flavor and maybe most importantly, the vanilla pudding is added after scalding the milk, not in the last 5 minutes of mixing. let me tell you from hard won experience, a little vanilla pudding is good. too much is not ๐Ÿ™‚

ingredients

1 cup organic valley whole milk
1 cup sugar
1/2 teaspoon salt
1 cup organic valley half-and-half
1 teaspoon vanilla extract or 1/2 teaspoon vanilla oil
3 cups organic valley heavy whipping cream
6 teaspoons vanilla pudding mix
2 cups frozen raspberries, pureed and strained through fine mesh sieve ( makes about 1 cup of juice )
2 teaspoons lemon flavored oil or 1 teaspoon lemon extract

directions:

1 cup of milk scalded in pan.
add 1 cup of sugar and 1/2 tsp of salt. stir till dissolved.
add 1 cup of half and half.
add 3 cups of heavy whipping cream.
add 6 teaspoons vanilla pudding mix, slowly. mix well.
add vanilla, raspberry, lemon flavoring.
chill in fridge till very cold.
put in ice cream machine for 20 minutes
transfer to a freezer safe container and freeze for at least 4 hours.

it’s been awhile since i whipped up a batch of purple moon ice cream. odin’s hockey team played a great game and earned a spot in the state hockey championship, which was the perfect excuse to make another half gallon.

this will sit in the fridge overnight and i’ll put in the mixer tomorrow.

i snuck a taste and i think this might be my best batch yet.

now that i think of it, i owe a debt of purple moon ice cream in exchange for getting an awesome lunchbox. maybe i’ll have to make two batches ๐Ÿ™‚

recipe: peaches and cream ice cream!

we ended up getting hundreds of peaches off the tree this years, so i figured after the success with purple moon ice cream i’d try my luck with a peaches and cream recipe! it’s basically my regular vanilla recipe ( which somehow i’ve posted?! ) with this peach processing methodology.

ingredients
1 1/2 to 2 pounds fresh peaches, peeled, pitted and chopped into pieces
4 1/2 teaspoons lemon juice
2 1/2 cups organic valley half-and-half
8 organic valley egg yolks
1 3/4 cup sugar
2 1/2 cups organic valley heavy whipping cream
4 tsp. vanilla extract
1/8th teaspoon salt

optional maple syrup for topping

directions

combine the peaches, 1/2 cup of the sugar and the lemon juice in a medium bowl. stir, cover and refrigerate overnight.

in a medium saucepan over medium heat, heat half-and-half until very hot, but not boiling, stirring frequently. Remove from heat and set aside.

in a mixing bowl, whisk together egg yolks and sugar until well blended and slightly thickened.

very gradually add half-and-half to egg yolks and sugar and mix until blended.

return half-and-half mixture to saucepan and cook over medium heat until small bubbles form around edge and mixture is steamy, stirring constantly. do not boil.

transfer half-and-half mixture into large bowl. stir in whipping cream, vanilla and salt.

cover and chill thoroughly, at least 8 hours.

assemble ice cream maker according to directions.

place a fine-mesh sieve over the bowl and pour the peaches into the sieve, straining the juice into the custard mixture.

start up ice cream maker and add mixture slowly.

churn for about 20 minutes until thick, soft-serve consistency is reached. add the peaches after about 15 minutes of churning.

put in a freezer safe container and store in the freezer.

in a fit of inspiration, odin and i decided to drizzle a bit of maple syrup on top of the ice cream and it is almost impossible to describe how outrageously good the result turned out. i mean, with 8 egg yolks and heavy whipping cream, the vanilla recipe is already a nearly over-the-top rich and creamy custard and when you add in the peach juice and peaches and maple syrup, well, it’s eyes-rolling-in-the-back-of-your-head good.

if you live in the upper midwest you’ve probably heard of blue moon ice cream. it’s a bright blue citrus-y concoction that tastes a little like the ice cream equivalent of fruit loops. odin likes blue moon but we’re not big fans of the fact that it’s loaded with food coloring and mystery ingredients. in fact, when i’ve researched recipes in the past it’s widely held belief that true blue moon contains castoreum which is made from the extrudate from the scent sacs of beavers. yummy! ( side note, castoreum is a “natural flavor” found in many vanilla products with “natural flavors”. if you use castoreum, you can use smaller amounts of pricey vanilla. )

so i was happy to hear a radio program with the folks behind the article “melting the mystery of blue moon ice cream” where they claimed to have found a blue moon recipe that’s really, really close to the real deal without beaver butt extract.

obviously i had to give it a try!

the recipe is straight forward. you can use whatever ingredients you like, but if you’re not using organic valley dairy you’re doing it wrong ๐Ÿ™‚

i didn’t use the blue food coloring called for in the recipe. the color is from the cup of pureed garden raspberries ( more on that in a moment ).

ingredients

1/2 cup organic valley whole milk
1/2 cup sugar
1/4 teaspoon salt
1/2 cup organic valley half-and-half
1/2 teaspoon vanilla extract or 1/2 teaspoon vanilla oil
1 1/2 cups organic valley heavy whipping cream
3 teaspoons vanilla pudding mix
1 teaspoon raspberry flavored oil or 1 cup frozen raspberries, pureed
1 teaspoon lemon flavored oil or 1 teaspoon lemon extract

directions:

1/2 cup of milk scalded in pan.
add 1/2 cup of sugar and 1/4 tsp of salt. stir till dissolved.
add 1/2 cup of half and half.
add 1 1/2 cups of heavy whipping cream.
add vanilla, raspberry, lemon flavoring.
chill in fridge till very cold.
put in ice cream machine for 20 minutes
add vanilla pudding during last 5 minutes of mixing ( weirdly, the recipe doesn’t mention what to do with the pudding in the directions but i think this is what you want )

and whoila! after freezing, you get a a purple-y ice cream that looks a little like the blue moon from our local ice cream shop.

but how does it taste?

odin and i sampled it and it is very, very close! i think it’s even a bit better than the ice cream shop variety. the flavors are a little “brighter” ( presumably because they’re, well, real ). it’s really close to “fruit loopy”. and the vanilla pudding nails the unique mouthfeel you get with the blue moon.

the one thing i would change in the next version is i wouldn’t use a cup of pureed raspberries. the seeds are distracting. i figured they would be when i was making it but i was too lazy to go through the process of pushing the puree through fine mesh to get the juice and not the seeds on the first iteration of product testing.

next time, no seeds! this is totally a keeper and going into regular ice cream making rotation.

odin liked the pinky/purple color and thought we should call it purple moon. so we will!

after the race it was time to head off for a fun birthday day in madison, wisconsin. we started at the awesome dane county farmer’s market which is on the capitol square so we got to peruse the approximately 300 vendors and go in the capitol and hit the observation deck which offers an excellent view of the city.

the rotunda in the capitol building is pretty awesome. odin thought it was mighty impressive. i wish i could have figured out a way to take a better picture. i tried to take a panorama of the entire thing but it wouldn’t stitch together nicely, so you only get to see a small bit ๐Ÿ™‚

so, off to the madison children’s museum we went because while i might be getting old, i’m not too old to hang out with odin at a children’s museum where they have fun stuff like a giant hampster wheel that generates electricity for lights!

the baby chick was so content it eventually fell asleep in odin’s hands! the museum staff ladies were super impressed with his Chicken Calming Powers.

then, alas, it was time to go and we headed to a photography exhibit at madison museum of contemporary art but there was no cameras allowed. at a photography exhibit! boo!

after the exhibit we went to pizza brutta for some of the best pizza in madison. i had the prosciutto with asiago cheese and arugula. highly recommended! kris and odin are more traditional in their pizza tastes and had pepperoni. odin said it was the best pizza he’d ever had which is very high praise indeed.

for some reason, i felt compelled to take a picture of the table sign instead of the food because i liked the colors, fonts, shadows and lines?!

and to cap off The Best Birthday, we went to chocolate shoppe ice cream for a scoop of butter pecan ice cream before heading home very full and very content.

’twas a fine day. odin said it was the best birthday he’d been to even though it wasn’t his birthday ๐Ÿ™‚

a casualty of time, i never got around to properly blogging the recipe for my pasture butter cheesecake but the fine folks who put together organic valley’s rootstock publication did use one of the photos i took and published the recipe in the latest issue along with my “award-winning” double chocolate hazelnut ice cream ( using another photo i took for a recipe i never blogged. gah, i need more time in the day! ).

if you can’t find a rootstock near you feel free to ask your local magazine shop, bookstore, or grocery to order it ๐Ÿ™‚

it seemed like a nice enough day for a bike ride to try out the new coon prairie trail that was recently finished between viroqua and westby. a bit breezy perhaps, but worth the 8 mile bicycle ride from our house to downtown since we could make a stop for ice cream at ole & lena’s kaffe hus. and, hey, we’ve done a 20 mile bike ride so we knew we could make it.

the ride out was, in hindsight, suspiciously easy because we somehow didn’t notice that we had a 20mph wind to our backs. i guess we should have known something was up when we made it the 8 miles to westby without seemingly having to pedal once.

it was so easy that odin decided he wanted to pick up 4 more miles to make it an even 12 before enjoying ice cream and heading back home. but by the time we made it back to ole and lena’s the winds were gusting up to 40 mph! and we were still 8 miles from home!

we were both still in denial about how hard the rest of the trip was going to be as we relished our ice cream cones and commented on how the crazy wind made for tough going.

i guess we both thought maybe the wind would calm down. we had no idea how wrong we would be.

the next 8 miles were brutal. the wind picked up more, sustaining more than 20 mph and gusting over 40mph. the winds were so strong that you had to pedal doing downhill just to keep moving!

for the first time in his life i saw odin really struggle with the idea he might not be able to accomplish something he set out to do. of course, i told him there was no shame in calling mama and waiting by the road for her to come pick us up.

“poppi, i really want to finish this. but i don’t know if i can. i don’t think i can. i really don’t think i can.”

i told him we’d take it one hill at a time and to listen to his body. just one pedal push after another and another and another. if at some point he didn’t have another pedal push, well that was just fine. we could always try again some other day.

it was amazing to watch him draw upon every ounce of determination he had and make it all the way home.

well, all the way except for the last few blocks when his front tire went flat ๐Ÿ™‚

he was pretty tuckered out when we got home but, of course, five minutes later he was asking when we could go outside and play some street hockey.
