the eric update – day 485: odin’s epicurean adventures! roasted pumpkin seeds.



while he can’t eat them yet because i think they’re probably the very definition of “choking hazard”, but that doesn’t mean that odin can’t enjoy the smell of fresh pumpkin seeds roasting in the oven.

we’re traditionalists when it comes to roasting pumpkin seeds and generally frown upon adding any fancy schmancy ingredients that distract from the simple roasted pumpkin flavors 🙂

ingredients:
– 1 1/2 cups pumpkin seeds ( about what you get from a mediumish sized pumpkin )
– 2 tsp. melted butter
– salt to taste

Preheat oven to 300° F. Mix pumpkin seeds in a bowl with the melted butter and salt and spread in a single layer on abaking sheet.

Bake for about 42 minutes – until golden brown – stirring occasionally.
