203/365. to eat, or not to eat,  the homemade beef jerky. that is the question  ( for a food scientist ).

a beef jerky experimentalist who lives on the east coast sent me a sample from his home kitchen. it was supposed to arrive via overnight shipping but ended up taking two days to get to me and the chill packs had long stopped chilling.

normally i’d just take my chances and eat it, but it’s moist which is giving me pause. the jerky feels dehydrated but there’s some sort of sweet and sour/honey/barbecue something or another glaze that’s making me think it could be providing a home for something that will wreak havoc on my gastrointestinal tract.
